Salt Fish and Green Fig
Ingredients:
– 1 pound of salted codfish
– 8-10 green figs (green bananas), peeled and cut into thirds
– 2 tablespoons of coconut oil
– 1 onion, finely chopped
– 2 cloves garlic, minced
– 1 tomato, chopped
– 1/2 teaspoon of thyme leaves
– 1/2 teaspoon of black pepper
– Scotch bonnet pepper or hot sauce (optional, to taste)
– Fresh parsley for garnish (optional)
Instructions:
1. Rinse the salted codfish under cold water to remove excess salt. Place it in a pot of cold water and let it soak for about 1-2 hours, changing the water every 30 minutes. Drain and rinse again.
2. In a large pot, add the green figs and enough water to cover them. Boil until the figs are tender, about 15-20 minutes. Drain and set aside.
3. In a separate pan, heat the coconut oil over medium heat. Add the chopped onion, minced garlic, and thyme leaves. Sauté until the onion is translucent.
4. Add the salted codfish, chopped tomato, and black pepper to the pan. Cook for about 5-7 minutes, breaking up the codfish into smaller pieces as it cooks.
5. Gently stir in the boiled green figs and continue to cook for another 5 minutes, allowing the flavors to meld together. Add Scotch bonnet pepper or hot sauce for some heat, if desired.
6. Garnish with fresh parsley if you like and serve hot. Enjoy your Saint Lucian salt fish and green fig!
